Gardening = Yummy Pasta Recipe








Life has really kept me busy!
How bout you?

Lots of Gardening and Grilling these days!

This is a picture of a part of my Garden.
Mostly Peppers , Tomatoes , Cucumbers , Greens and Herbs.




Lots of Cherry Tomatoes lately.


Made a really yummy pasta using some simple white sauce with the cherry tomatoes
and lots of fresh Herbs from the Garden.



Simple but very good!

I love a Good Garden inspired Pasta.

Family approved!




I have some Asian cucumbers and yellow wax beans coming in next ,
cant wait to see what I make with those!

Sandwich Love

Hi Again,

Lately I have really had an addiction to Sandwiches.

I have honestly always had a Love for Sandwiches.

What is your Favorite Sandwich?

I don't think I could really pick a favorite..

but if I had too....

I would pick a plain white bread with plenty of mayo and lots of Fresh Tomatoes with Salt & Pepper!

I know, nothing fancy about it!
But ever since I read about it on Harriet the Spy when I was a kid...  

I know, books really do effect my life!

Anyways.....

I always enjoy a freshly made Egg Salad - especially of the eggs come from my chickens!

Makes the salad taste 100 times better!

Lately I have been making a lot of Egg Salad and Tuna Salad.






I guess I wanted to make something then the usual  Ham & Turkey.

This time around , I also made some Fresh Honey Wheat Bread that did not need any kneading...







which the whole the family loved. I do not have a Recipe or it this time because this was a package mix.

It came out really Good and with the Egg Salad even better.

What kind of Bread do yall eat at home more?

Wheat or White?


Here are a few Sandwich ideas and Recipes I have found recently.

One was Crispy Chicken w/ Avocado and Mozzarella with a yummy Lemon Mayo.

Another Yummy Sammy I want to try is from an old Martha Living Magazine ,
I found it the other day.

It is a Grilled Ham with Broccoli Rabe and Fontina Cheese and Fig Jam / Dijon Mustard.

Summertime Gardening & Food

Hello Friends,




Wow, this Summer has really flown by!


Who else is not ready for Summer to end?


Lol- right now I would not mind the temp lowering a bit, but....


im not ready at all for my kido to start school this year...


ugh- School board meetings and etc...


Anyways.....enuff of that for now..


Right now , I will be honest with yall...my Garden has gotten very overgrown with weeds and etc..


I have not had the energy and time as much as I would have liked this summer...


However, that the way it goes sometimes.....


I am thankful to have my Greenhouse.


In there I have a lot more going on-


Lots of Radishes and Oregano right now.


Plus: Tomato , Watermelon , Roses , Peppers , Sweet Basil , Thyme , Sage  - Plants


I have been making Bruschetta Non-stop


My Husband has had enuff but I could eat a lot more of it. LOL


Lots of Bread , Garlic , Tomatoes and Basil--- YUM!!!!! Love it!

I have also been using my Thyme as mush as possible.


Baked some Tilapia with Thyme , Garlic  and Lemon . Slow Bake at 350* for 30-45 mins

So I put it to good use- making over a dozen Corn Tortillas.

The Fish , Fresh Tortillas and some cilantro, tomatoes, and a Squirt of lemon & avocado to top and Dig in!!

Cooking these days....Plus Fun & Easy Chicken Taco Recipe

Sooo as yall can tell- I have been doing more reading and watching movies than anything....

Reason for that is that I pulled my back out again...so I was down most of last month and most of this month....

Anyhow.... I was not able to Cook, Garden and etc...not going to lie it was kinda depressing and lonely but my little kiddo and Hubby were what kept me going...and a lot of physical therapy!

I am sooooooooo HAPPY to be back and up doing much better!!


Last week I was able to Grill sooo Excited!!! lol

Chicken Breast, onions , tomatoes / All in that order !
1 after the other...stove top w/ a bit of oil in a pan...

Halved my Garden Tomatoes and tossed with S&P !! 


After it all was cooked-up I tossed it in a glass bowl & covered it with foil to stay warm.... 

I lowered the heat on the stove top and popped the tortillas (corn,flour,wheat-whatever you want..i used flour ) in the same pan to heat them thru nicely with a little flavor! As Mrs. Carla Hall from 1 of my fav. Cooking shows says .." there is flavor in the brown." LOL Love her...(off topic again....I am totally random...I know..lol)


When those where done I tossed them on a piece of foil and paper towel (1 on top of another)

added some cheese and the chicken, onion, tomato mix on............squish a lime or lemon if you want and a little cilantro or sour cream (whatever you want or got) don't stress about it....

They are supposed to be Easy at home....

My finished Grilled Chicken Tacos! Happiness!!! Love these!!! :)


Maybe tomorrow can be #TacoTuesday!! :)

All you need is :

Chicken Breast
onions
tomatoes
tortillas

And any extra toppings like sour cream, cheese and etc...

I LOVE FOOOD & Julia Child!!

I realllly Love Food , Cooking and Baking! Im not great :) 


But- I am a everyday home cook.


My Hero and Inspiration is My Grandmother who passed when I was 18 & Julia Child!


My Grandma made Tortillas everyday ,every morning and also taught me to make them as well.
 (might need to make a tortillas tutorial)


Anyhow...I Really Love Julia Child & the Movie Julie & Julia !!
