Tortilla LOVE & Recipe

Hello Again,

I am trying to keep up with my blog these days - we shall see how that goes...


Life has been so busy .....with try to keep up with all the watering in the greenhouse

Plus- Cooking and Baking like Crazy and Spring Cleaning....ugh all keeping me busy....

Im exhausted these days....

Anyhow...I have really been cooking up a ton of Tortillas ... I try to make them on a regular basis -but life gets in the way...

Plus I want the recipe to stay fresh in my head .

Here is the recipe I use for Fresh Flour Tortillas:
2 cups flour
1⁄2 teaspoon salt
1⁄4 cup vegetable shortening or 1⁄4 cup vegetable oil
1 teaspoon baking powder
1⁄2 cup warm water (may possibly need to add more, up to 3/4 cup) or 1⁄2 cup milk (may possibly need to add more, up to 3/4 cup)







Mixed the flour , salt , baking powder first then mix in the vegetable shortening - then the water... You get this ball or Tortilla dough




Cover Ball of Dough with towel or plastic wrap for 20-30 minutes

The First Cilantro leaves picked from my Cilantro plant were perfect or a taco.



Cilantro fixes perfectly in my Taco of Machacado
Aka Shredded beef made with eggs, onions, tomatoes
Yumminess for sure Mexican food at its best.

Let's Talk Movies,TvShows and Enchiladas

Hello Everyone,

Lately, I have been catching up on all the Movies & TV Shows I have been dying to watch!


The Guardians of the Galaxy~


I LOVED The Guardians of the Galaxy!!!!

My favorite character was GROOT!!! I AM GROOT!!!


I Also watched TAMMY!!!!
W/The Amazing Melissa McCarthy!!!

That Movie made me Laugh sooooo Hard!!!
I Have not laughed that hard in soo looong! :)

I LOVE Melissa McCarthy!
She makes me LOL A lot!


One of my Favorite Tv Shows is MODERN FAMILY!!
I Love Modern Family!
It is always so funny and honest...
I have watched from the very beginning when it first came out..
but I have missed a few episodes here and there..so it was time to catch up...
I have a been watching Season1-4so far!


I am also catching up on the on Brooklyn 99 which I am really Loving!!!

Brooklyn is soo FUN , FUNNY AND Fresh!
I loved Adam Sandberg on SNL & now on Brooklyn99!!!!

Okay, if your interested here is the Enchilada Recipe & Cheese Sauce we ate for the Movies! ;)

I Love Enchiladas! One of my favorite foods!


Cheese Sauce :

Velveeta cheese

1lb of browned ground beef

1lb of browned ground sausage

2 cans of green chilies

2 cans of rotel chilies

All melted together in a crockpot


Cheesy Beef Enchilada Recipe :

Ingredients -

Cheese Sauce

Shredded Sharp Cheddar Cheese 

Browned Ground Beef w/ diced onions and green chilies from a can.

Corn Tortillas



First I run the Corn tortillas thru a sizzling pan of oil...a bit greasy -yes
but trust me its the best way to soften your tortillas nicely ....
you can give them a little tap with a paper towel...
you dip sizzle the tortilla for a min and fill with a bit of the beef and cheese...
boom , boom ,boom
and roll in the pan and move on the the next tortilla until your pan is full...

When the pan is full of rolled up naked tortillas you then add the Cheese Sauce if you make it plus the rest of the Beef & Cheese to the Top!

Toss in the Oven for a min for the whole pan to melt the cheese nicely and Boom time to EAT!

YUM- I might have to make another pan- just talking about making them is making me hungry...lol

Cooking these days....Plus Fun & Easy Chicken Taco Recipe

Sooo as yall can tell- I have been doing more reading and watching movies than anything....

Reason for that is that I pulled my back out again...so I was down most of last month and most of this month....

Anyhow.... I was not able to Cook, Garden and etc...not going to lie it was kinda depressing and lonely but my little kiddo and Hubby were what kept me going...and a lot of physical therapy!

I am sooooooooo HAPPY to be back and up doing much better!!


Last week I was able to Grill sooo Excited!!! lol

Chicken Breast, onions , tomatoes / All in that order !
1 after the other...stove top w/ a bit of oil in a pan...

Halved my Garden Tomatoes and tossed with S&P !! 


After it all was cooked-up I tossed it in a glass bowl & covered it with foil to stay warm.... 

I lowered the heat on the stove top and popped the tortillas (corn,flour,wheat-whatever you want..i used flour ) in the same pan to heat them thru nicely with a little flavor! As Mrs. Carla Hall from 1 of my fav. Cooking shows says .." there is flavor in the brown." LOL Love her...(off topic again....I am totally random...I know..lol)


When those where done I tossed them on a piece of foil and paper towel (1 on top of another)

added some cheese and the chicken, onion, tomato mix on............squish a lime or lemon if you want and a little cilantro or sour cream (whatever you want or got) don't stress about it....

They are supposed to be Easy at home....

My finished Grilled Chicken Tacos! Happiness!!! Love these!!! :)

All you need is :

Chicken Breast
onions
tomatoes
tortillas

And any extra toppings like sour cream, cheese and etc...

I LOVE FOOOD PT2. plus a Great Bread Recipe!

Since I have a ton of Chile's available plus a couple of tomatoes here and there I had to make a little salsa ! I just threw a few chilies , tomatoes , garlic in a pan til blackened, blistered then peel garlic and cut tops of peppers ...and into the blender they go...add salt pepper lime juice , fresh cilantro as you blend and your done! Add diced onions at the end and mix with a spoon! ENJOY! :)

I LOVE FOOOD & Julia Child!!

I realllly Love Food , Cooking and Baking! Im not great :) 


But- I am a everyday home cook.


My Hero and Inspiration is My Grandmother who passed when I was 18 & Julia Child!


My Grandma made Tortillas everyday ,every morning and also taught me to make them as well.
 (might need to make a tortillas tutorial)
